SALMON PATTIES 
1 can salmon
1/2 c. bread crumbs
Extra salt
1/2 c. chopped onions
2 eggs

Remove the backbones from the salmon, but not the rest of the bones. Using fingers, shred all the salmon. Mix in the onions, eggs and a little extra salt and the bread crumbs. If the mix is too soft to form into patties, use a little more bread crumbs.

Form into patties and fry in a little oil in a skillet on medium-high heat. Turn when lightly brown and brown both sides. Do not cook too long as the salmon is already cooked. Serve with salad, French fries, biscuits and butter and jelly as you want. Serves 3.
