POTATOES AU GRATIN 
3 c. diced cold cooked potatoes
3 tbsp. butter
3 tbsp. flour
1 1/2 c. milk
1/4 lb. grated sharp Cheddar cheese
salt and pepper to taste
2/3 c. bread crumbs

Put potatoes in shallow broiler-proof baking dish. Melt 3 tablespoons butter. Blend in flour. Add milk gradually and stir until thick. Add cheese and stir until melted. Season. Pour over potatoes and mix lightly. Put under broiler at medium heat and broil until browned.
