SHRIMP SCAMPI ALA FRESCA 
1 lb. lg. shrimp, peeled and deveined
8 sprigs fresh parsley, minced
1/3 c. clarified butter
3 tbsp. minced garlic
6 scallions, thinly sliced
3 oz. dry sherry
Black pepper to taste
Lemon slices for garnish

1. Heat clarified butter over medium heat. 2. Lightly saute garlic 1 to 2 minutes. 3. Add shrimp, scallions, lemon juice, sherry and cook until shrimp are white firm. 4. At last minuted, add pepper and parsley. 5. Serve with plenty of crusty French bread to soak up the butter!
