ULTIMATE APPLE PIE 
8 lg. peeled, cored, tart apples, sliced in eighths
1/2 c. sugar (or to taste)
1/2 tsp. cinnamon (opt.)
Dash freshly grated nutmeg
1 tbsp. lemon juice (adjust to tartness of apples)
1/2 tsp. grated lemon rind
1 tbsp. flour or tapioca
2 tbsp. water

Combine apples, sugar, cinnamon, nutmeg, lemon juice and rind, flour and water. Roll out 1/2 dough between 2 sheets of wax paper, turn into pie pan. Fill with apple mixture, should come way above rim. Dot with butter. Roll out the rest of the dough. Moisten rim of lower crust with cold water, lay on the top crust and crimp together. Prick holes in top with fork. Bake 15 minutes in oven preheated to 450 degrees, then bake about 30 minutes at 350 degrees. Yield: 6 slices.
