SHRIMP SCAMPI 
1/2 to 3/4 c butter
1 clove garlic, finely chopped
1/3 c. chopped onion
1 tbsp. chopped parsley
1 lb. shrimp
1 lb. linguini
Grated Parmesan cheese

In a saucepan, cook shrimp in boiling water for 3 minutes. Drain, clean and devein. Cook linguini in boiling, salted water according to package directions. Drain. Melt butter in a skillet over low heat. Add garlic, onions and parsley; saute until tender, about 3 minutes. Add shrimp and saute for an additional minute or until shrimp is warm. Divide linguini into 4-5 servings. Pour shrimp and butter mixture over linguini. Top with grated Parmesan cheese.
