SALMON QUICHE 
1 1/2 c. whole wheat flour
1/3 c. grated Parmesan cheese
1/4 lb. butter or 1/2 c. Crisco, rubbed in flour and cheese
3 to 4 tbsp. water
Fried onions and green peppers
1 can salmon
Mushrooms
2 to 3 oz. grated cheddar cheese

Mix flour, cheese, butter and water as light as possible. Let stand 5 minutes. Roll out, put in pie plate. Partially bake crust for 10 minutes at 350°F. Layer onions and green peppers and salmon in bottom of crust. Cover with mushrooms if desired and grated cheddar cheese.

Cover with the following egg mixture:

3 eggs
1 cup milk
2 tbsp. white flour
basil
oregano
salt and pepper

Beat and pour over top of quiche.

Bake 30 to 45 minutes at 350°F.
