SAUERKRAUT SALAD 
1 med. onion, chopped
2 carrots, grated
1 green pepper, cut fine
1 c. celery, cut fine
1 jar sauerkraut, drain & rinse

DRESSING:

1/2 c. oil
1/2 c. water
1/3 c. vinegar
1/2 c. sugar or equivalent sweetener

Let stand overnight. Mix and let stand overnight in refrigerator.
