FRUIT MUFFINS 
2 1/4 c. sugar
2 large eggs
1/4 tsp. salt
1/4 c. vegetable oil
1/2 c. buttermilk powder
2 c. water
4 c. whole wheat flour
1 tbsp. baking soda
3/4 c. walnuts, chopped
1/2 c. raisins
1/2 c. dates, chopped
few drops maple flavoring

Mix together sugar, eggs, salt, oil, dry buttermilk powder and water. Add flour, baking soda, walnuts, raisins, dates and flavoring. Fill cupcake or muffin pans with mixture 3/4 full and bake at 375°F for 20 to 25 minutes. Mix will be very loose.

Makes approximately 34 large muffins. They freeze well.
