SQUASH CAKE | |
4 eggs, separated 1 c. shortening 2 c. sugar 2 c. cooked squash 3 1/2 c. self-rising flour 2 tsp. vanilla Preheat oven to 350 degrees. Separate eggs, beat egg white until fluffy with 1 1/2 teaspoons sugar. Put yolks in large mixing bowl. Add sugar, shortening, squash, flour, mixing well after each addition. Add vanilla. Mix in egg white mixture. Mix until smooth. Put in 9 x 13 inch greased and floured pan. Bake until golden brown, approximately 45 minutes. |
