LEE'S FAMOUS PINA COLADA MUFFINS | |
1 (1 lb. 2 oz.) box yellow cake mix 1 tsp. coconut extract 1 tsp. rum extract 1 c. flaked or shredded coconut 1/2 c. chopped walnuts 1 c. crushed pineapple Prepare cake mix in a mixer bowl, following package directions. Add other ingredients; mix 1 minute. Do not overmix. Grease tins or line with paper cups. Fill 3/4 full. Bake at 350°F for 15 to 20 minutes. |
