DATE & NUT ROLL COOKIES 
1/4 c. butter
1/2 tsp. vanilla
1/2 tsp. baking soda
1/2 c. light brown sugar
1 egg
3/4 c. sugar
2 c. sifted flour
1 c. chopped nuts
7 1/2 oz. dates (1 pkg.)

Cream butter, brown sugar, 1/2 cup sugar, egg and vanilla until light. Add dry ingredients and make into firm roll in wax paper and chill. Cut dates small and cook with 1/4 cup granulated sugar and 1/2 cup water, simmer 5 minutes. Stir often. Add nuts and cool. Roll out dough into 2 rolls, thin, spread filling over. Roll tight into waxed paper and tie ends. Chill overnight. Slice 1/8" thick. Bake at 350 degrees for 10 minutes.
