MAMA'S FRUIT CAKE | |
2 c. self-rising flour 4 eggs 1 c. sugar 1 stick melted butter 1 lb. chopped pineapple 1 lb. chopped cherries 1 lb. dates (optional) 8 c. chopped pecans Add flour to fruit and nuts, making sure all is well coated. Beat eggs until light and fluffy. Gradually beat in sugar. Add melted butter. Mix in with hands the fruit and nut mixture. Line tube pan with greased brown paper. Bake in 275°F oven for approximately 2 to 2 1/2 hours. |
