GERMAN POTATO SALAD 
5 lbs. red potatoes (in jackets)
2 tbsp. cornstarch
1 c. vinegar
4 tbsp. grease
1 med. onion
1/2 lb. bacon, fried, cut in sm. pieces
1 c. sugar
2 c. water

Boil potatoes in jackets, remove jackets when cool.

Fry bacon and drain all but 4 tablespoons of grease. To this grease add cornstarch, vinegar, sugar and water. Then add onion and 2 teaspoons salt. Cook to thin gravy stage. Mix potatoes and bacon in. Let set several hours.
