GERMAN POTATO SALAD 
5 lbs. red potatoes
1/2 lb. bacon
1 c. sugar
1 c. cider vinegar
1 c. water
Sm. green pepper
Sm. onion
1 heaping tbsp. cornstarch + 1/2 c. water

Boil, peel, quarter and slice potatoes. Add a little salt and pepper and 1 small green pepper and 1 small onion cut up.

In skillet fry bacon until crisp, crumble into potatoes. Pour off all but about 1 tablespoon bacon fat. Add sugar, water and vinegar and bring to boil. Mix cornstarch with 1/2 cup water and pour into boiling mixture. Pour glaze over potatoes. Let set 12-24 hours. Reheat and serve.
