GOLDEN GLOW SALAD 
2 tbsp. (2 env.) unflavored gelatin
2 (1 lb. each) cans grapefruit sections, artificially sweetened
2 cups boiling water
1/2 cup lemon juice
2 tbsp. artificial sweetening
4 tsp. vinegar
1/2 tsp. salt
2 cups grated carrots

Soften gelatin in liquid drained from grapefruit; add boiling water, stirring to dissolve gelatin. Add lemon juice, sweetening, vinegar and salt; chill until mixture begins to thicken. Fold in grapefruit sections and grated carrots. Spoon into a lightly oiled 2-quart mold. Child until firm.

Makes 12 servings.

Each serving contains 43 calories.
