CAESAR SALAD | |
2 garlic cloves, crushed 1/2 tsp. each salt and pepper 6 oil-packed anchovy fillets, rinsed and chopped 1 tbsp. lemon juice 1 egg, raw or coddled for 1 min. 1/3 c. olive oil 1 head Romaine lettuce, washed and torn into bite size pieces 1/2 c. grated Parmesan cheese 1 c. croutons, store bought or homemade In large salad bowl, mix garlic, salt, pepper, anchovies, lemon juice and egg. Add olive oil and mix to combine. Add lettuce and toss. Then add Parmesan cheese and croutons and toss again. Serves 4. |
