RICOTTA COOKIES 
2 sticks butter
2 c. sugar
3 eggs
1 lb. Ricotta cheese
1 tsp. baking powder
1 tsp. baking soda
4 c. flour
1 oz. bottle pure anise extract

Melt butter and add sugar, stir until smooth. Add anise, baking soda, baking powder and flour. Grease cookie sheet and drop by teaspoon (not to close).

Bake at 350 degrees for 11-12 minutes until bottom is brown. Frost and sprinkle.
