RICOTTA CHEESE COOKIES 
2 sticks butter
2 c. sugar
3 egg yolks
1 lb. ricotta cheese
2 tsp. vanilla
1 tsp. baking soda
4 c. flour
Pinch of salt

Cream butter and sugar. Add egg yolks, ricotta cheese and gradually add to mixture. Drop by teaspoons on ungreased cookie sheet. Bake 10 to 12 minutes at 375 degrees. Bottom should be light brown. Cool. Sprinkle with colored sugar.
