PORCUPINE MEATBALLS 
1 lb. ground beef
1 sm. onion, chopped
1 sm. Bell pepper, crushed
1/2 tsp. salt
1/2 tsp. pepper
8 Saltine crackers
2 eggs
1/4 c. ketchup
1 can vegetable soup
1 can cream of mushroom soup
1/4 c. oil
1 c. uncooked rice

Crush cracker, add ketchup and eggs. Add salt and pepper, Bell pepper and onions. Add ground beef, mix well. Roll mixture into small balls and roll into uncooked rice. Put oil in pan brown and pour off grease. Pour vegetable soup and mushroom soup over meat in skillet. Add 1 can of water and simmer until sauce is gravy.
