TATER CRISP CHICKEN 
1/4 c. butter
1 c. mashed potato flakes
1 tsp. salt
2 to 3 lb. frying chicken, cut up

Heat oven to 400 degrees. Place butter in 13 x 9 inch baking dish, melt in oven. In plastic bag, combine potato flakes and salt. Rinse chicken in cold water; shake in plastic bag. Place chicken skin side down in melted butter. Bake uncovered at 400 degrees for 30 minutes; turn chicken. Bake 30 minutes longer.
