WHITE CAKE 
2 1/4 cups sifted cake flour
1 1/3 cups sugar
2 1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup Crisco or soft butter
1 cup milk
1 1/2 tsp. vanilla or lemon
3 egg whites

Preheat oven to 350°F.

Grease and flour two 8-inch round pans, or one 13x9-inch or one 6-cup Bundt pan. Mix together dry ingredients well; add shortening, and half of the milk. Beat for 2 minutes, scraping down sides occasionally.

Add remaining milk, eggs and flavoring; beat for another 2 minutes and transfer to baking pans.

Bake in preheated oven for 30-35 minutes (layers), 35-40 minutes (13x9-inch), or 40-45 minutes (Bundt pan) or until a wooden pick inserted in center comes out clean.

Frost with your favorite frosting.
