FRIED RICE 
1 or 2 bunches of minced scallions (save green tops)
1 1/2 c. cooked rice
1/2 stick butter
1/2 can of Spam or boiled ham, chopped in sm. pieces
1/2 lb. fresh shrimp, or 2 sm. cans drained shrimp
3 eggs

Cook rice. In electric skillet saute scallions in butter until soft. Cut up ham in small cubes and stir in with onions. Add shrimp and cook together on low heat for several minutes.

Begin to fold rice in onion/ham mixture. Scramble the eggs and add, cutting into small pieces when cooked. Cook several minutes. Now add tender green onion tops (about 1/2 cup) to mixture. Mix well. Do not let green tops get soft.
