WELSH RABBIT 
1/4 c. butter
1/2 c. all-purpose flour
1/2 tsp. salt
1/8 tsp. dry mustard
Dash cayenne pepper
2 c. milk
1 tsp. Worcestershire sauce
2 c. shredded cheddar cheese
Toasted English muffins

Twenty minutes before serving: In medium saucepan over low heat or in double boiler melt butter. Stir in flour, salt, mustard, pepper until blended. Stir in milk and Worcestershire. Cook, stirring until thick. Add cheese and cook, stirring until blended and hot. Serve cheese mixture over warm muffins. 6 servings.
