MUSHROOM ORZO 
1 c. dry orzo
1 med. sliced onion
2 tbsp. olive or vegetable oil
1/2 lb. mushrooms, stemmed & sliced
Salt, pepper, garlic salt & parsley to taste
3 tbsp. Parmesan cheese

Cook orzo according to package directions. Drain and rinse under cold water. Saute onions slowly in oil in medium size frying pan. Cover with tight fitting lid, stirring often until onions are translucent. Add mushrooms and saute until wilted, covering the pan if they appear dry. Season with salt, pepper, garlic salt and parsley. Add the orzo to the mushroom mixture; stir briefly and reheat. Toss in Parmesan cheese and enjoy. Serves 4.
