POTATOES LORENE 
2 c. leftover mashed potatoes
1 c. flour
3 eggs
1 med. onion, diced
1 tsp. salt
1 tsp. baking powder
6 (1 inch) cubes of Velveeta cheese
1 stick butter

Mix potatoes, flour, eggs, salt and baking powder. If not a smooth texture add a little more flour. In a large skillet melt butter and brown onion slightly. Drop potatoes into the onions with a large spoon and press a piece of cheese into the middle of each patty. Cover cheese over with a small spoon of the potato mixture and smooth with the spoon to seal. Fry until potatoes start to brown and then turn and gently flatten patties out with a cake turner. Fry on both sides until golden brown. When serving spoon the cooked onions over the top of the potatoes.
