QUICHE 
Deep dish, frozen pie crust (or make your own; whole wheat is good)
Swiss cheese, sliced
Cheddar cheese, grated
4 eggs
3/4 to 1 c. milk or cream
Vegetables, cut up
Meat, pre-cooked, cut up
Nutmeg (several shakes)
Salt (several shakes)
Pepper (several shakes)

Saute cut up vegetables (mushrooms, onions, etc.) in 1 tablespoon butter. Precook vegetables you wish to include (broccoli, cauliflower, asparagus, etc.). Precook meat (cut up bacon, ham, crabmeat, etc.). Mix egg, milk and spices in a bowl. Cover bottom of pie crust with sliced Swiss cheese. Next layer is vegetables, then meat. Pour egg mixture into pie crust. Cover with grated Cheddar cheese. Bake at 375 degrees for 45 to 60 minutes. You can use any combination of vegetables and meats. Serves 4 to 6.
