FOOLPROOF PRIME RIB 
1 standing beef rib roast
Salt & pepper

Allow meat to stand at room temperature for at least 1 hour. If frozen thaw completely and bring to room temperature.

Preheat oven to 375 degrees. In the morning rub roast with salt and pepper. Place on rack in pan, rib side down, fatty side up. Roast at 375 degrees for 1 hour. Turn off oven and leave roast in oven, but don't open oven! Thirty to 40 minutes before serving, turn oven on again to 375 degrees and reheat roast. Do not remove roast or open oven until ready to serve. For a more well done roast, increase reheating time 30 to 45 minutes, however roast meat in morning as directed.
