WHITE RADISH SALAD (KOREAN) 
2 giant white radishes
1 to 2 cooking apples
Juice of 1/2 lemon
3 spring onions

DRESSING:

3 tbsp. light soy sauce
1 tbsp. salad oil
2 tsp. sesame oil
3 tbsp. mild vinegar
3 tsp. sugar
1 tsp. salt
1 tbsp. toasted crushed sesame seeds
1 fresh hot chili, seeded and chopped

Peel radishes and cut in matchstick strips. Peel apple and cut in similar strips and soak in cold water with a good squeeze of lemon juice to prevent discoloration.

Slice spring onions very finely including white and green portions. Combine ingredients for dressing well. Drain apples well and toss with radishes, onions and dressing. Cover and chill before serving.

Serves 4.
