SQUASH AND POTATOES 
1 lg. butternut squash
4-5 med. potatoes
1 lb. Cheddar cheese, cubed
1 tbsp. soy sauce
1/3 c. mayonnaise

Cut squash in half and clean out seeds. Steam until tender and remove skin. Put in large bowl, after cutting into cubes.

Cut potatoes into cubes (take skin off if desired). Cook until tender in boiling water. Drain well and add to squash. Blend together with a potato masher.

Add soy sauce, mayonnaise and cheese cubes. Mix well. Bake in 350 degree oven until heated through and cheese is melted, approximately 30-40 minutes.
