FRESH APPLE PECAN CAKE 
2 eggs
2 c. sugar
1/2 c. oil
1 tsp. vanilla
1 c. chopped pecans
4 c. finely chopped apples
2 c. sifted flour
2 tsp. baking soda
1 tsp. cinnamon
3/4 tsp. salt

Mix eggs, sugar, oil and vanilla. Add flour, soda, cinnamon and salt. Stir in flour by hand. Add pecans and apples. Stir in by hand. Pour into greased and floured 9 x 12 pan. Bake at 325 degrees for 55 to 60 minutes.
