2 c. sugar
3 eggs
1 1/4 c. oil
1/4 c. orange juice
3 c. plain flour
1/4 - 1/2 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon, if desired
1 tsp. vanilla
1 c. raw chopped apples
1 c. coconut
1 c. chopped pecans

Mix sugar, eggs and oil well. Add juice and vanilla. Sift all dry ingredients together and add to mixture, mixing well. Add apples, coconut and nuts. Bake in prepared tube pan at 325 degrees for 1 1/1 hours.
