SALMON BURGERS ON TOASTED BUNS 
1 can (16 oz.) salmon, drained, cleaned & flaked
1/2 c. finely shredded Cheddar cheese
1/3 c. fine, dry, unseasoned bread crumbs
1/4 c. chopped celery
1/4 c. mayonnaise or sour cream
1 egg
2 tbsp. chopped green onion
1/2 tsp. prepared mustard
1/8 tsp. garlic powder
1/8 tsp. pepper
Optional Sauce Ingredients:
1/3 c. mayonnaise or sour cream
1/4 c. grated lemon
1/3 tsp. dill (dried)

In medium bowl, combine all ingredients until well mixed. Divide into 4 equal parts and form 1/2 inch thick patties. Preheat a generously, greased griddle or skillet on medium-high heat. Cook 8-10 minutes or until browned. Turning them after 4-5 minutes. Serve with sauce (optional) on split and toasted buns.

Optional Sauce Directions: In small bowl, combine all ingredients. Refrigerate until ready to use. Makes 4 servings.

Note: This recipe is good hot or cold. The sauce is nice if using salmon burgers as a main entree instead of a sandwich.
