GEORGE WASHINGTON GINGERBREAD 
2 1/4 c. flour
1 1/4 tsp. ginger
1 1/4 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1/2 tsp. salt
2 tsp. baking powder
2 eggs
3/4 c. brown sugar, packed
3/4 c. molasses
3/4 c. oil
1/2 tsp. baking soda
1 c. boiling water

Sift the flour and the next 6 ingredients and set aside. Beat eggs in large bowl; add sugar, molasses and oil and mix until creamy. Remove beater and with wooden spoon, stir in flour mixture in 2 portions until well mixed. Add soda dissolve in boiling water, then beat with mixer until smooth.

Pour into greased and floured 9 inch square pan. Bake at 350 degrees for 35 minutes or until tests done. Cool and serve plain or with whipped cream or lemon sauce.

Gingerbread is very good with hot applesauce poured over each serving. I make my own, using 1 Granny Smith for every 4 Galas and add only cinnamon - no sugar needed with this combination of apples if you like your applesauce to have more apple flavor than store-bought has - and the apple flavor with cinnamon is very complimentary to the gingerbread.
