HEALTHY HEARTY BURRITOS | |
1 lb. ground chicken 1 pkg. taco seasoning mix 2 1/2 c. pinto beans 4 c. water 1 med. onion, chopped 1 1/2 tsp. salt, optional Brown and drain ground chicken. Follow taco seasoning package directions by adding taco seasoning packet plus 3/4 to 1 cup water to ground chicken. Simmer 15 minutes. Set aside. Mix water, beans, and onions in large saucepan or Dutch oven. Cover and heat to boiling. Boil 2 minutes. Remove from heat and let stand 1 hour. Add just enough water to beans to cover. Heat to boiling. Reduce heat. Cover and boil gently, stirring occasionally until beans are very tender, about 1 1/2 hours. Add water during cooking if necessary. Mash beans, then stir in salt. Add the seasoned ground chicken and mix well. Place small amount of mixture on flour tortilla and top with your favorite toppings! Roll up. Makes 2 large meals. May be frozen and easily reheated as a quick dinner another night! |
