STUFFED PORK CHOPS | |
1 c. packaged stuffing mix 4 pork chops (1 1/2" thick) 3/4 tsp. salt Dash of pepper 3 tbsp. shortening 1 c. beef consomme 2 tbsp. flour Make pocket in pork chops while they're still partially frozen. Prepare stuffing mix according to package directions. Stuff pork chop pockets. Sprinkle with salt and pepper. Fasten with wooden sticks. Melt shortening, brown chops. Place browned chops in a rack on a casserole dish or baking pan. Put shortening and consomme in bottom of pan (beef or pork gravy can also be used). Add 1/2 cup water. Cover and bake for about 30 minutes. If gravy is too runny add flour to thicken. If gravy is too thick add water. Makes 4 servings. |
