BRINE FOR PORK 
8 lb. pork shoulder
5 cups water
10 cups apple juice
1½ cup brown sugar
1½ cup kosher salt
3 tablespoons minced garlic
3 tablespoons onion powder
3 tablespoons peppercorns

Let marinate overnight. Inject with apple juice brine Rub the shoulder with mustard and or Worcestershire sauce and your favorite rub. Let sit for a few hours and rub again.
