SAFFRON RICE CASSEROLE 
Saffron rice (5 oz. mahatma is best) (light brown)
1 sm. jar Cheez Whiz
1 can mushroom soup
1 can Mexicorn

TOPPING:

Crushed Ritz crackers (about 20) or crushed chips

Cook rice as directed. Put in greased casserole or bake dish. Bake until bubbly, 20 to 25 minutes. Top with topping. Bake 5 to 10 minutes longer.
