ZUCCHINI-APRICOT JAM 
6 c. zucchini, peeled and grated
6 c. sugar
1/2 c. lemon juice
1 (6 oz.) can crushed pineapple (do not drain)
2 (3 oz.) pkg. apricot or orange Jell-O

Combine first 4 ingredients in a large pan. Cook 10 minutes. Then add Jell-O and stir well. Place in glass jars and seal.
