FILLET OF SOLE PARMESAN | |
1/2 c. grated Parmesan cheese 1/4 c. butter, softened 3 tbsp. mayonnaise 3 tbsp. chopped scallions 1/4 tsp. salt Dash of Tabasco sauce 2 lbs. sole fillets (or any fresh white fish) 2 tbsp. lemon juice Combine cheese, butter, mayonnaise, scallions, salt and Tabasco. Set aside. Place fish fillets (serving size) in a single layer in buttered baking dish. Brush with lemon juice and let sit 10 minutes. Broil fillets 3 to 4 inches from heat for 5 minutes. Spread with cheese mixture and broil 2 to 3 minute longer, until golden. Serves 6. |
