CHRISTMAS CUT OUT COOKIES 
4 c. flour
2 sticks butter, unsalted
1 1/2 c. sugar
3 eggs
2 tsp. vanilla
1/2 tsp. salt, optional
1 tsp. baking soda

Mix sugar and butter. Add eggs, vanilla. Add flour, salt and soda. Mix well together. Knead together on floured board. Make into a brick. Wrap in Saran Wrap. Refrigerate at least 2 hours. Cut off as needed. Roll on board and cut into shapes. Cookies should not be brown, should be very light in color. Bake at 350 degrees for 10 to 12 minutes. Then frost.
