BANANA BREAD | |
4 c. pkg. biscuit mix 1 c. sugar 1/2 c. flour, sifted 1/2 tsp. baking soda 4 eggs, beaten 1 c. Imo OR dairy sour cream 3 c. bananas, mashed 1/2 to 1 c. walnuts, chopped Thoroughly combine biscuit mix, sugar, flour and soda. Combine eggs and sour cream; stir into dry ingredients alternately with bananas. Stir in nuts. Pour into 2 greased loaf pans, 9 x 5 x 3 inch. Bake at 350 degrees for 60 minutes or until bread tests done. Cool on wire rack. Makes 2 loaves. (I buy over-ripe bananas on sale; mash and measure the amount needed for this recipe; then freeze. The night before baking, take out of freezer and put in refrigerator. They look awful but taste fine - at half the cost.) |
