PISTACHIO PINEAPPLE PIE 
1 crumb crust
1 c. coconut
1 c. Cool Whip
1 pkg. pistachio pudding
1 (8 1/4 oz.) can crushed pineapple, well drained

Blend together coconut, Cool Whip, and pudding mix in large mixer bowl. Beat at high speed until thick. Fold in pineapple. Pour into crust. Garnish with coconut. Chill at least 3 hours.
