LEMONADE CHEESECAKE 
1 1/2 c. crushed graham crackers
2 1/2 tbsp. sugar
1 1/2 tsp. cinnamon
1/2 c. melted butter

FILLING:

3/4 c. lemonade
1/2 c. sugar
1 1/4 tbsp. gelatin
3/4 lb. cream cheese
1 1/4 tbsp. grated lemon rind
2 1/2 tbsp. lemon juice
1 1/2 tsp. vanilla
1 c. cream
Fresh fruit to decorate

1. Mix together the crushed graham crackers, sugar, cinnamon and melted butter. Firmly press on the bottom of a 9 inch springform pan. Chill until ready to use.

2. Combine the lemonade, sugar and gelatin in a small saucepan. Place over heat and stir until the sugar and gelatin are dissolved. Set aside until cool.

3. Soften the cream cheese, then beat in the lemon rind, lemon juice and vanilla.

4. Mix in the cooled gelatin mixture.

5. Beat the cream and fold into the cheese mixture.

6. Pour into the prepared crust and chill until firm.

7. Serve decorated with fresh fruit of your choice. Serves 6-8.
