EGG NOODLES 
About 2 handfuls flour
Dash of salt
1 egg

Beat 1 egg and 1/2 egg shell of water together. Add to flour and salt mixture. Form into balls and roll out on floured board. Be sure to add small amount of flour as needed. Fold thinned, rolled dough in two and fold one more time across. Cut thin. Let dry about 20 minutes. Cook either chicken or short ribs, salt and pepper to taste for 2 hours. Remove meat from pot. Add noodles to pot of broth and cook about 7 minutes before serving.
