JAMBALAYA 
1 lb. sausage, sliced
2 c. chopped green pepper
2 c. chopped onion
1 c. tomatoes or tomato sauce
3/4 tsp. thyme
1 tsp. white pepper
3/4 tsp. black pepper
1 lb. ham, diced
2 c. chopped celery
1/2 c. tomato puree
7 c. broth, fish flavored
1 tsp. oregano
1 1/2 tsp. cayenne pepper
1/2 tsp. pepper

Brown sausage and ham in heavy pan over high heat, until bottom of pan is scorched. Add the rest of the ingredients to the meat mixture, adjusting amount of pepper to taste. Simmer until vegetables are done and the bottom of the pan is clean. Add 2 pounds or 36 large shrimp and a pound of crab meat just before serving. Serve over rice.
