DATE NUT COOKIES 
FILLING:

2 1/3 c. dates, chopped
1 c. sugar
1 c. water
1 c. nut meats, chopped

Combine dates, sugar and water. Boil for 10 minutes. Add nut meats.

DOUGH:

1 c. shortening
1 c. brown sugar
3 eggs, well beaten
4 c. flour
1/2 tsp. salt
1/2 tsp. baking soda

Cream shortening, sugar and eggs. Beat well. Sift flour, salt and soda. Add to shortening mixture. Refrigerate until set. Divide the dough into 3 parts. Roll out like pie crust. Divide filling and place on each piece of dough. Roll up into a log. Refrigerate or slice and bake. Bake at 350 degrees for 12 to 15 minutes.
