ORANGE - NUT BUTTER CAKE | |
3/4 c. butter, softened 1 c. sugar 1 tbsp. grated orange rind 1 tsp. vanilla 3 eggs 1 c. orange marmalade 3 c. all-purpose flour 1 1/2 tsp. baking soda 1/2 tsp. salt 1/2 c. fresh orange juice 1/2 c. evaporated milk 1 c. chopped nuts Cream butter, sugar, orange rind and vanilla until mixture is light and fluffy. Add eggs, one at a time, beating well. Blend in marmalade. Sift together flour, baking soda and salt. Add to creamed mixture alternately with combined orange juice and evaporated milk. Stir in chopped nuts and blend. Turn into well-buttered and floured 10 inch tube pan. Bake in preheated 350 degree oven for 55 to 60 minutes. Cool in pan 10 minutes. Remove to wire rack. When cool, first top with confectioner's sugar. |
