KEY LIME PIE 
2 pkgs. (4 serving size) or 1 pkg. (8 serving size) lime-flavored gelatin
2 c. boiling water
2 tsp. grated lime rind
1/4 c. lime juice
1 pt. vanilla ice cream, softened
1 pkg. graham cracker crust

Dissolve gelatin in boiling water; add lime rind and juice. Spoon in ice cream, stirring until melted and smooth. If necessary, chill until mixture will mound. Spoon into crust. Chill until firm (about 2 hours). Garnish with whipped topping, if desired. Serves 8.
