WILD RICE DRESSING 
3 c. cooked wild rice
4 slices bacon
1 med. onion, sliced
1/2 lb. fresh mushrooms, sliced
3 ribs celery, diced
1 tsp. crushed leaf oregano
1/2 tsp. crushed sage
2 c. bread crumbs
Salt & pepper to taste
1/4-1/2 c. chicken stock

Cut bacon into 1" pieces, fry; add onions, mushrooms, celery to saute with bacon until crisp but tender, celery slightly softened. Add cooked wild rice, oregano and sage, taste, adjust seasoning. Add bread crumbs and stock enough to moisten. Extra (if desired) : 1/2 pound sausage, cooked, crumbled and drained.
