BANANA NUT BREAD | |
3 bananas (1 1/3 c.), mashed 2 c. sifted flour 2 eggs 1 tsp. baking soda 1 1/2 tsp. salt 1/2 c. chopped nuts 2/3 c. sugar Melt butter over low heat in a large saucepan. Remove from heat and stir in sugar. Add beaten eggs and bananas. Stir in flour, sifted with soda and salt only until blended. Stir in nuts. Pour into a greased loaf pan and bake 60 minutes at 350 degrees. Cool for 10 minutes inside pan. Let cool on rack completely before wrapping in foil. Yield: 1 loaf. |
